Texas Chili

  • Ingredients:

    2 lb chili meat
    1/2 cup chili powder
    2tsp. paprika
    2tsp. dry minced onion
    1tsp. garlic powder (or 2tsp dry minced)
    1tsp. oregano
    2tsp. cumin (or cuminos powder)
    2tsp. salt
    1 8oz. can of tomatoe sauce
    2 cups water
    cayanne pepper to taste (1 tsp. is pretty hot)
    1Tbs. & 1tsp. masa flour

    Cooking Instructions:

    Sear chili meat, then add everything, but masa flour.
    Cover and simmer 30 minuets. Stir ocassionally (don't let it stick).
    Then, add masa flour to 1/4 cup warm water, make sure no lumps in water. Then, add the flour mixture to pot. simmer another 15 minuets.
    Note:
    I always double or triple this. It freezes well in small containers for chili dogs and such. And I find it hard to come up with left overs to freeze. I love fresh chopped onions and cheddar cheese atop, and cornbread on the side, with ice tea to take away the hot. Same recipe turns out even better with course ground deer meat!
