Weight Watchers Soup

  • 2 1 bunch carrots

  • 1 bunch celery
  • 1 very lg onion

Slice all this up and saute in very little oil in pot until they are limp.
Add: No fat Beef or Chicken Broth (Swanson's) I use 6 cans Let this simmer until carrots are cooked. Now you can add anything else.

Cabbage sliced Zucchini sliced Spinach fresh or frozen Cauliflower fresh or frozen 2-3 tomatoes chopped Kale chopped Broccoli fresh or frozen.
You get the picture anything you like in vegetables. Add the veggies that take the longest to cook first and then keep adding. When all the vegetables are cooked, let the soup cool and then I put, in batches, the soup in the food processor and just pulse chop 2-3 times. You want the veggies chunky. This comes out like a Campbell's Chunky Soup. These are all "free" vegetables on the WW program and you can eat this anytime and as much as you want. Enjoy!!
