Watermelon Muffins

Ingredients:
1 1/2 cups flour
1 teaspoon baking powder
2 teaspoons baking soda
1/8 teaspoon salt
1/8 teaspoon cinnamon
6 tablespoons butter, at room temperature
2/3 cups sugar
2 eggs
1/2 cup milk
1/2 cup watermelon juice
1/2 cup watermelon pulp
1/2 cup raisins
Mixing Instructions:
Preheat oven to 325 degrees.
Grease muffin cups.
Sift together flour,baking powder,baking soda,salt,and cinnamon in large bowl. In another bowl, cream butter and sugar. Add eggs. Whip in milk, watermelon juice, watermelon pulp,and raisins. Add to dry ingredients. blend just until incorporated.
Fill prepared muffin cups 3/4 full.
Bake for 25 minutes.
Cool on wire rack.
Makes 1-1/2 dozen
