Spinach -
Rice Casserole

Ingredients
4 Cups cooked wild rice
4 Eggs
1 tsp Salt
1/2 tsp Pepper
1/2 LB cheese, grated fine
4 TBS butter
2 LBS washed fresh spinach
2 big bunches green onions, finely
chopped
1 Cup sunflower seeds
4 TBS chopped parsley
2 TBS sesame seeds
Directions
Beat eggs with salt and pepper and stir
into rice. Stir in cheese and
parsley
Tear stems from spinach and chop fine.
Fry them lightl with the green onions,
also chopped fine. Chop or tear spinach
leaves and stir into frying pan until
wilted. Add into rice mixture. Stir in
sunflower seeds. Taste for
seasoning.
Pack into casserole dish Top with
toasted sesame seeds and 2 TBS of melted
butter sprinkled on top. Bake at 350F
for 35 minutes, uncovered.
