Every year,
at Yule time, meowmie does a lot of baking and, lucky for all of us,
she makes special Yule biscuits for all of the kitties, and the dawg,
too! She wraps some of them up individually for the six of us and the
dawg and sets a large plate of them out for the ferals that live in
our yard. I asked her for the recipe, so I could share it with all of
you. Of course, you can make these any time of the year.

Ivy's Favorite Biscuits
(adapted from a recipe found in Prevention magazine)
2 cups whole wheat flour
1/2 cup rye or buckwheat flour
1/2 cup brewer's yeast
1 cup bulgar
1/2 cup cornmeal
1/4 cup parsley flakes (or 1/2 cup fresh minced parsley)
1/4 cup dry milk
1 teaspoon dry yeast
1/4 cup warm water
1 cup warm chicken (or beef) broth
(meowmie uses the drippings from roasted meat and adds
warm water to make one cup... pork is good, too)
1 egg beaten with 1 tablespoon milk (glaze)
minced catnip (optional)
Preheat oven to 300º F. Combine flours, brewer's yeast, bulgar,
cornmeal, parsley flakes, and dry milk in a large bowl. In a small bowl,
combine dry yeast and warm water. Stir until yeast is dissolved. Add
broth.
Stir liquid into dry ingredients, mixing well with hands. Dough will
be very stiff. If necessary, add a little more water or broth. On a
well floured surface, roll out dough to 1/4-inch thickness. Cut with
knife or cookie cutter into desired shapes (make small ones for the
kitties and larger ones for dawgs).
Transfer biscuits to cookie sheets and brush lightly with egg glaze.
Sprinkle a small amount of minced catnip on some of them, for a special
treat, if desired. Bake at 300º F for 45 minutes. Turn off heat
and let biscuits dry out in oven overnight.
Makes 6 to 12 dozen biscuits, depending on size.
