Easy Bacon Brunch

2 cups plain croutons
4 ounces Cheddar cheese - grated
6 thick slices bacon
7 eggs
1/2 teaspoon salt
1/2 teaspoon dijon mustard
1/8 teaspoon onion powder
Dash black pepper

Cook the bacon, drain well and crumble.

Place croutons in a 10x16 greased (I use vegetable spray) casserole. Sprinkle with the grated cheese.

Beat eggs together and add seasonings. Pour egg mixture over the croutons and cheese.

Sprinkle with crumbled bacon.

Bake at 325 degrees for 45 minutes to an hour.

Serves 6 - 8
