Here's where you will find some of my family favorites.

Let's Begin... at the end... with desserts.

Red Velvet Cake

2 sticks butter
2 cups granulated sugar
3 eggs
1 bottle red food coloring
2 tablespoons cocoa
2 1/2 cups cake flour - sifted
1 1/2 teaspoons baking soda
1 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla flavoring
1 tablespoon cidar vinegar

Cream butter and sugar well. Add the eggs one at a time and then the food coloring and vanilla. Sift together the dry ingredients of flour, cocoa, soda and salt. Add the dry ingredients alternatelay with the buttermilk and mix well. Add vinegar last and mix until well blended.

Bake in a 350 degree preheated oven. Yields: 3 layers

Cream Cheese Frosting

1 stick butter
8 oz. cream cheese - softened
1 cup flaked coconut
1 cup pecans - chopped fine
1 teaspoon vanilla flavoring
1 box 4x confectioners sugar

Cream the butter and cream cheese well. Add the sugar, nuts and coconut. Spread on cooled cake layers.

Are you tired of the Christmas fruitcake that sets around until Valentine's growing mold? Below is a recipe for a no-bake fruit cake that's sure to get raves and disappear quickly.

No-Bake Fruit Cake

1 1/2 boxes of Graham Cracker Crumbs
1 lb. marshmallows
1 cup evaporated milk
1 box golden seedless raisens
3 cups chopped pecans
1 small bottle of cherries - drained and chopped (Reserve some cherrie and pecan halves for decorating top of cake)
1 cup candied fruit of your choice ( I prefer the pineapple)

Place the marshmallows in milk. Place over low heat until the marshmallows are melted. Be sure to stir often to prevent sticking. Mix the graham cracker crumbs with the fruit and nuts blending well. Pour the hot mixture over the dry ingredients and combine.

Place in a wax paper lined container to mold. Decorate the top with the reserved cherry halves and pecan halves. Refrigerate for safe keeping.
