Frogmore Stew
AKA Low Country Boil

This recipe is indigenous to the Low Country of South Carolina and Georgia. I have no clue where it got it's name but be assured there are no frogs in it! The only seasoning used in this is Old Bay Seasoning (TM) and the preferred amount is 2 Tablespoons per quart of water. You may adjust to your own personal taste.

6 quarts water
3/4 cup Old Bay Seasoning (TM)
3 pounds new red potatoes - scrubbed
2 pounds hot smoked sausage - cut into 2 inch pieces
12 ears fresh corn - cleaned and broken in half
4 - 6 pounds large fresh shrimp - heads off but unpeeled

Bring water to boil in a large stock pot and add Old Bay Seasoning.

Add potatoes and cook about 15 minutes. Add sausage and corn. Continue to cook another 5-10 minutes. Stir in shrimp and cook only until they are pink. Do not overcook shrimp.

Drain immediately and serve.

Traditionally, this is served outdoors. A large table is covered with brown wrapping paper and the drained pot is emptied onto the table. Guests help themselves.
