Baked Pineapple Casserole

1 20 oz. can crushed pineapple with juice

1 large can pineapple slices

Maraschino cherries for garnish

5 - 6 thick slices day old bread (torn into pieces)

1 cup granulated sugar

1/4 cup of brown sugar

1/2 cup softened butter

4 eggs - beaten

1/4 teaspoon ground cinnamon

1/4 teaspoon freshly grated nutmeg

pinch of salt

Preheat oven to 350 degrees.  Butter a medium sized flat casserole dish.

In mixing bowl cream together butter and sugar. Beat in eggs one at the time. Add spices.  Stir in bread and crushed pineapple with it's juice and blend well.

Place in oven and bake for approximately 45 minutes.  Remove from oven and place drained pineapple slices on top. Place cherry in center of each slice.  Sprinkle generously with brown sugar and return to oven until sugar is melted and golden brown.

This is delicious as a side dish for baked ham.
