Southern Grits and Sausage Casserole

1 cup quick cooking (not instant) grits - prepared according to package directions
2 pounds mild bulk sausage
4 cups grated sharp cheddar cheese
4 eggs - well beaten
1 cup milk
1/2 teaspoon ground black pepper

Cook and crumble sausage; drain well. Set aside.

Cook grits according to package directions.

In a large bowl mix grated cheese and hot grits. Cheese will melt. Combine beaten eggs and milk in a medium bowl. Add a small amount of the grits mixture to the eggs and mix well. Now, combine the eggs mixture with the remaining grits and cheese mixture. Blend the two well.

Pour into a 13x9 inch baking dish. Cover and place in refrigerator overnight.

When ready to cook and serve remove from refrigerator 15 minutes before placing into a preheated 350 degree oven. Bake for approximately one hour.
