A month or so ago I attended a prewedding party at my Scottish neighbors house. Some of their relatives from the homeland were in and they wanted me to me them.

You think you would be able to understand a Scottish person but maybe not. Remember the Scottish brogue, deep, rich, and fast? That’s how it was. Plus they use different slang and things might have slightly different meanings. It was fun because I am fond of puzzles and these folks were especially proper and gracious.

Most of the talk was about the impending wedding. In Scotland the bride carries a horseshoe in her bouquet and carries a parasol. Check it out here. The man wears a tartan kilt in the family colors. NO underwear! Haahahahahahahaha! It’s like he is flopping his big ole wangle all around AND he can say, “Baby, how’s right now?” And be ready!

I like it.

This whole summer has been about food and travel and more food and swimming and MORE FOOD. I am actually tired of cookouts. But I did LOVE the baked beans that C made. Here’s the recipe.

Scottish Baked Beans

8 strips bacon, cut into 1” strips

1 can lima beans, drained

1 can butter beans, drained

1 can kidney beans, drained

1 large can pork and beans

2 large onions, minced

Cook bacon and onions together. Add garlic to taste. The bacon doesn’t get real crispy but that’s the way you want it.

Add ¼ cup apple cider vinegar and a handful of light brown sugar. C is a petite woman with little hands, so I think that is about a half cup, but I would have added a bit more. Cook this for ten minutes.

Add beans. Place in bean pot. Honestly I don’t know what a bean pot is so I used a cast iron kettle. It worked. Bake for 1 hour at 350 degrees.

(I made this for last weekend’s Camp Crystal Lake Adventure. All of the men thought it was sensational. Actually each one of them thought I made it to pick up a man…them! Men are funny. But if you are a girl you might want to add this to your repertoire. You will earn kisses and thank-yous galore! Catch my drift?)

C and I are going to have a special Scottish dinner right before Christmas. Just the two of us. She is doing haggis, vegemite, and some special cod dish, which I have forgotten the official name of. Can’t wait!
