Sushi Mat:
A sushi mat is a required item, but makes the rolling process much easier. A sushi mat is nothing more than small planks of bamboo laced together with string. It is for the most part natural, little plastics and the like involved. This means that you will need to properly wash and dry the mat, as well as occasionally bleach it (to prevent molding). Store in a cool, dry place.

Rice Cooker:
Unless you are a consistent rice-eater or enjoy making Asian dishes, you will not need this. I myself do not own a rice cooker, but my friend how allowed me borrow hers in the past. It makes the process and cleaning much simpler, as they are designed to be non-stick and easy to use. Requires little experience.
