This recipe was given to me by a very dear couple, Kieth & Irene Knight..who welcomed me into their home & family. The first meal I had with them was, Chalupas.
There are 3 parts to making this meal.
PART 1: Beef
Mixture:
Brown ground beef with 1/2
T.Cumin, 1 to 1 1/2 Onions(diced), 1 T
Garlic, 1 T. Seasoning Salt, 1 8oz can
of Tomato Sauce. Make sure it is mixed
well together.
Part 2: Bean
Mixture:
Blend in a blender:Pinto
Beans, more onions & some salt, jalapeno
pepper.
Part 3: Corn Tortillas: Fry them till crispy in a little oil.
Now comes the fun part...piling onto the tortillas whatever toppings you desire...Take some of the Beef Mixture, then the Bean Mixture and smear generously on tortilla. Add to the top of this: lettuce, cheese, tomatoes, hot sauce, jalapena peppers and/or onions.
Then it's Chow Time.
Goes very well with Marguaritas for that South of the Border taste sensation.
