IS THE BACK YARD WHERE WE HIDE THE EGGS, CRACKED OR OTHERWISE.
WHERE ARE THE GOLDEN EGGS?
Many Easter eggs are colored and hid.
by the bunnies of Easterland.
It is their annual job,
a job so very grand.
Of all the eggs hidden
the Golden egg is number one.
It glows with the brilliance of the setting sun.
It rewards the children with a special prize.
It puts a sparkle in one lucky child's eyes.
So, on this Easter morn,
where could the golden egg be???
In the green, green grass??
Under a rock????
Or in the crook of a tall, tall tree???
If you should find one don't tell me.
Just run around the yard and shout WHOOPEE!!!

This poem was written for my grandchildren, especially Lauren. This was her first real Easter.

IS THE KITCHEN WHERE WE DO ALL SORT OF THINGS WITH CRACKED EGGS
All the bunnies, chicks and ducks love Grandma's kitchen. Yummmmmm Yummmmmmm.
WHAT IN THE WORLD ARE WE GOING TO DO WITH ALL THESE EASTER EGGS?
How about some fantastic egg salad or some delish deviled eggs, or using them raw, an Easter cake.
RECIPE 1...........EGG SALAD
6 boiled eggs
1/2 small onion chopped
1 Tbs sweet pickle relish
1Tbs mayonaise
1 Tbs French's Durkeese dressing
salt and pepper to taste
Using a fork, mash up the boiled eggs. To the mashed egg add the relish,onions (finely chopped), mayonaise and durkesse.Mix well. Taste and then add desireed salt and pepper.
RECIPE 2...........DEVILED EGGS
My oldest daughter in defending her mother's recipe for deviled eggs made life a little difficult for a home ec. teacher. The teacher had given the class a devil egg recipe that when made was awful. Kathryn refused to make her deviled eggs this way and used my recipe even though she could have flunked the course. Don't know if the teacher ever changed it. She should have.
12 eggs
paprika
salt and pepper
2Tbs. sweet pickle relish
mayonaise and durkeese in equal amounts.
chopped onion to taste
Take boiled eggs, peel, and split into halves. Put yolks in bowl. If any egg whites are split or broken and will not make good devil egg holders, put these into bowl also. With fork finely mash the yolks and whites. The whites give the eggs some texture. Add the salt and pepper. Then add the onions, pickles, mayonaise and durkeese. Be careful as to the amount used of mayonaise or durkeese. You want the mixture to be a little stiff, not runny or very soft. Mix well and spoon into the whites. When completed sprinkly with paprika. The combination of the yellow(egg),green(pickles), and red(paprika) make an appealing display. Should serve 10 people.
RECIPE 3...........EASTER BUNNY CAKE
The procedure as follows: Leave one of the layers whole. This will be the head layer. Cut the other layer as shown in the diagram to form the ears and the tie.
Tint 1/4 cup of coconut pink by tossing with red food coloring. Arrange cake, using frosting to hold pieces together.
Frost entire cake. Sprinkle with coconut and decorate with candies giving the bunny eyes, nose, wiskers, mouth and cute tie.
For an Easter Birthday or just an Easter surprise this cake will light up any child's eyes and make a permanent Easter memory.It did for my youngest daughter, Rebecca when her April birthday fell on Easter one year.
