Chicken with Mayonnaise
(Yield: 4 Servings)

Ingredient:
1 lb (500g) Chicken breast
1 tsp Salt
1/4 tsp Pepper
1 small Onion
1 stick Celery
1/4 tsp Pepper
1/4 cup Almond (roasted)
1/2 cup Mayonnaise
3-4 tbsps Grated cheese
3 1/2 Oz Snow peas (strings removed)
1 tbsp Oil
1/4 tsp Pepper
3 tbsp Butter
Preparation:
1. Sprinkle chicken with salt and pepper. Set aside. Cut onion & celery
into 1/3 inch square pieces. Heat 1 tbsp of butter and oil in a pan. Cook
chicken for 7-10 minutes or until cooked.
2. Using the same pan, cook onion and celery for 2
minutes. Add 1/4 tsp salt and pepper to flavor and turn off heat. Add almond
and mayonnaise and mix.
3. Place chicken onto aluminum foil. Add
celery mixture onto chicken and sprinkle with cheese. Cook in the over at 350 deg.
until golden brown. Place on a plate
4. Saute snow peas with 2 tsps of butter. Sprinkle
tiny salt and pepper to taste. Place on a plate next to chicken and serve.
