Aging, your Health, and your Cookware
Research on the aging process at the US Department of Agriculture Human Nutrition Research Center suggests that maximizing the nutritional quality of your diet may slow down or prevent age-related problems. The studies recommend cooking foods for short periods of time in as little water as possible. Other research shows that when cooking food in waterless cookware we lose only 2% of the vitamins and minerals, in other words, this cookware will retain 98% of your vitamins and minerals. Boiling food in regular cookware the old fashioned way destroys an average of 42% of your vitamins and minerals. Plus, waterless cooking is much healthier
since it eliminates the need for grease or oil during cooking.
Bacteria Growth
Surgical stainless steel prevents the growth of bacteria because of its pore-free surface. Hospitals use surgical stainless steel utensils because it's easier to keep sterile. Plus, being pore-free, you'll never worry about tiny bits of the metal that your cookware is constructed of chipping off in your foods. Part of the corrosion resistance of 304 surgical stainless steel is due to an invisible, passive oxide film that forms on the metal's surface once it's exposed to air.
STEAM-CONTROL KNOBS
Using Waterless Cookware with a Steam Valve built into the knob makes waterless cooking much easier. To use the steam control valve, start cooking on medium heat, remember that you should never use high heat with 304 surgical stainless steel cookware. Then, when steam begins to vigorously escape from the valve, close the vent and turn the heat down to low and finish cooking.
During the cooking process, to know if you are using the correct temperature and that the food inside the utensil is cooking correctly, the lid of the pot should spin freely during cooking. If the lid feels 'locked' onto the pot, then the temperature is too low. On the other hand, if the lid is 'bouncing' and a lot of water and/or steam is escaping from around the lid, then your temperature is too high.
Sturdy Handles
The phenolic handles are superbly styled. They're resistant to heat, cold, and detergents. The handles were tested for durability in ovens up to 350 degrees, however, the manufacturer does not recommend placing the pots in an oven as they were made to be used on a stove-top. After all, why would want to turn your oven on when you can bake your food in this cookware right on top of your stove?
Each handle is molded with a very large eyelet that will permit hanging the utensils, a convenient feature which will save you lots of cabinet space. Pieces
The set comes with the same five basic pots as our other two sets. However, there is a slight difference in the other pieces. This set has a mixing bowl which can also be used as a double boiler insert in place of an actual pot which serves as a double-boiler unit in the other two sets. Also, unlike the other sets, the KT915 does not come with the egg cups and holder, but this set does come with a deep-fry basket or strainer.

NOTE: The Handles are tested up to 350 degrees and can be used on a gas stove, but they should not be used with extremely high temperatures when using an open flame. An open flame on a gas stove 'can' reach up to 608°F.

Giant-Size Waterless Stainless Vegetable Steamer
Our giant-sized skillet measures 14-inches in diameter and 4 3/8 inches deep.
The steamer basket is just under 14 inches in diameter and 4 1/4 inches deep. You can easily
place the stainless steel steamer inside and steam as many vegetables as you want. But this
large steamer pot wasn't meant for use as a vegetable steamer alone. You can use the steamer
as a hot dog steamer, a clam steamer, oyster steamer, and the large pot may be used with the lid as a gumbo or soup cooker.
