In Memory of Joan
Joan was a great fan of the Detroit Tigers. She followed every
game on Television, and on a couple of occasions attended their games. One
of the highlights of her days was the day she sat at the head table next
to Frank Tanana, a former Tiger Pitcher, as he addressed the Ontario Students
for Life in October 1995, in La Salle, Ontario.
One of her passions was cooking. Mostly everyone who knew her talked about
her cooking, the recipes she gave out, the heaps of waffles she made practically
every Sunday, the lasagna, and several other dishes. Here are a couple of
recipes from her collection:
Crazy Cake
1½ cups flour
2 cup sugar
1½ teaspoonfuls baking soda
½ teaspoonful salt
4 tablespoonfuls carob powder
Sift all the ingredients together thoroughly. Put in a bowl, and make three indentations in the mixture. Into one put in 1½ teaspoonfuls vanilla, into another put in 1½ teaspoonfuls vinegar, and into the third put in 6 tablespoonfuls of melted shortening. Pour 1 cup water over all the mixture and mix or beat well. Pour into a greased pan. Bake for about 35 minutes at moderate temperature [350° F]
CARROT LOAF
Combine together one cup sugar, two beaten eggs, one cup salad oil, and one teaspoonful vanilla. Stir in one cup of coarsely grated carrots. Blend well. Stir in about half a cup of chopped walnuts. Spoon into a greased loaf pan. Bake at 350° F for 50 minutes.
BAKED VEGETABLE BEEF STEW
Brown 1½ pounds of stewing beef cut into 1 inch cubes in 2 tablespoonfuls shortening or oil. Mix together 2 tabespoonfuls flour, 1 teaspoonfuls chili powder, 1 teaespoonful paprika, ½ teaspoonfuls salt, ¼ teaspoonfuls pepper.
Add this mixture to the meat. Stir in 2 cups of mashed tomatoes, and one cup of chopped or sliced carrots. Add one cup water, four medium sized onions [chopped], one cup sliced celery, and 1½ cups uncooked noodles. Bring to boil, then pour into an ungreased covered casserole. Bake for about one hour at 350° F.
Blueberry Cake
2 cups blueberries - fresh or frozen
Half cup sugar
1 teaspoonful lemon peel
Mix together lightly and spread evenly on the bottom of a greased 9" x 9" pan.
One and a third cups presifted flour
Three quarter cups sugar
Half teaspoonful salt
Three teaspoonfuls baking powder
One quarter cup shortening
One egg, beaten
Three quarter cups milk
Stir dry ingredients together. Cut in the shortening until it looks like oatmeal. Add egg and milk. Blend just until moistened. Pour over prepared fruit. Bake at 350° F for 45 to 50 minutes. Serve warm with ice cream or light lemon sauce.

VELLA-ZARB: at St. Joseph's Hospital, Chatham, on Saturday, March 30, 1996, Joan Anthide Vella-Zarb of Chatham, wife of Thomas Vella-Zarb, at age 60 years. Born in Cospicua, Malta in 1935, daughter of the late Saviour Attard and the former late Mary Cilia, Joan came to Canada in 1957, was an employee of the Lapointe-Fisher Nursing Home for several years, and was a member of the St. Ursula's C.W.L. Surviving her are a daughter Karen Vella-Zarb of Toronto; 4 sons, David and his wife Joanne of Chatham, Pierre and his wife Cynthia, Alex and his companion Penny, and Michael all of Toronto; 6 grandchildren; 2 sisters Vicky Attard and Connie Serge in Malta and a former daughter-in-law Tami Imeson of Chatham. Predeceased by a brother Emmanuel in Malta. Resting at the Hinnegan-Peseski Funeral Home, 156 William St. S. from 7-9 p.m. on Sun-day and on Monday from 2-4 and 7-9 p.m. Funeral Mass will be Celebrated on Tuesday at 10 a.m. in St. Ursula's Church. C.W.L. Prayers Monday at 3:30 p.m., Parish Prayers Monday at 7:30 p.m., and Cursillo Farewell will be Monday at 8 p.m. Interment will be in St. Anthony's Cemetery, Chatham. Donations to the Family or The Diabetes Association would be appreciated.

JOAN (ATTARD) VELLA-ZARB
Funeral was held from The Hinnegan-Peseski Funeral Home on Tuesday April 02. 1996 for the late Joan (Attard) Vella-Zarb of Chatham, who died at St. Joseph's Hospital. Chatham on Saturday, March 30, 1996 at age 60 years.
Funeral Mass was Con-Celebrated in St. Ursula's Church. at 10:00 a.m. by Fr. J. J. Devine, Fr. Daniel Vere, Fr. Mike Dwyer, Fr. Paul Cousak, and Fr. Charles Caruana. Sister Anne Louise Cape, Pastoral Assistant recited Parish Prayers in the funeral home on Monday. at 7:30 p.m., followed by a Cursillo Farewell.
The Pallbearers from the Father James Assembly of the Fourth Degree Knights of Columbus included, Jack Roest, Mike Kelly, Harry Goudreau, John Verbeem. Leonard Eagan and Ed Gagner.
Interment was St. Anthony Cemetery, Chatham. Ontario. | |
Michael made her a memorial cross
| On the tenth anniversary, 30th March, 2006, a monument incorporating Michael's original cross was erected replacing the wooden cross.
