Kaya's Winter Recipes

Okay, most of the recipes below are Christmas recipes, that is because this is the sort of food I bake over the Winter Holidays, which for me happen to be Christmas.

Sugar Cookies
1 cup butter
1 cup sugar
1 large egg
1 teaspoon vanilla extract
2 teaspoons baking powder
2 and 3/4 all purpose flour

1. Preheat oven to 350*F. In a large bowl with mixer at medium-high speed, beat butter and sugar until smooth. Beat in egg and vanilla extract. Add baking powder and flour, one cup at a time, mixing after each addition. The dough will be very stiff; blend last addition of flour in by hand. Do not chill dough.
2.Divide dough into two balls. On a floured surface, with floured rolling pin, roll each ball approximately 1/4-inch thick. Dip cutters in flour before each use. Bake cookies on top rack of oven for 12-15 minutes, or until cookies are lightly browned. Cool before decorating.

Cookie Icing
1 cup sifted confectioners' sugar
1 teaspoon milk
2 teaspoons light corn syrup

Place sugar and milk in bowl. Stir until mixed thoroughly. Add corn syrup and mix well.

North Pole Character Cupcakes
3/4 cup butter, softened
1 cup Granulated sugar
2 eggs
1 teaspoon vanilla
2 cups all purpose flour
1-1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
2/3 cup milk
Icing:
1 cup butter, softened
4 cups icing sugar
2 tablespoons milk

1. Line 12 large muffin cups with paper liners or grease ligtly; set aside.
2. In large bowl beat butter with sugar until fluufy. Beat in eggs, 1 at a time, then vanilla. In seperate bowl, combine flour, baking powder, cinnamon, nutmeg and salt; stir into butter mixture alternately with milk. Spoon into prepared cups.
3. Bake in center of 400*F oven for about 25 minutes or until golden brown and tops spring back when lightly touched. Let cool in pan on rack for 5 minutes; transfer to rack and let cool completely.
4. Icing: In bowl beat butter until fluffy. Beat in icing sugar alternately with milk, making three additions of icing sugar and two of milk. Divide icing amoung bowls and tint with food coloring as desired. 5. Decorating: Spread icing on cupcakes, and add candies to create the look of one of the North Pole Characters. Ex.Reindeer, add Cocoa Powder to the icing, spread a thick layer across cupcakes, and use half peices of Pretzels for antlers, make a little bump of extra icing where the snout should be, and add a little red or black candy. Use halfed M&Ms for the eyes.
