Snowballs)
One of my top 3 choices for Christmas Cookies

1 (4 sticks) pound butter
1 cup confectioners' sugar
4 cups flour
2 teaspoons vanilla
1 cup ground pecans (see note below)
Cream the butter, add the sugar and mix well.
Add flour, vanilla and 1 cup
ground nuts. Mix thoroughly. Chill.
Form into small balls and place on pans - bake
at 350 degrees for 15 minutes
until set but not brown. Roll in powder sugar
while warm.
NOTE: I like to
chop the nuts and not grind them.
This recipe was given to me by an elderly
lady who used to babysit my sons when they were babies. (They are now 32
years old). She used to hand these cookies out on Halloween!
