A comfort food meal that can be made ahead
and frozen, or
assembled early in the day and cooked when
required.
1/2 c. catsup
2 Tbsp. vinegar
1 Tbsp Worcestershire sauce.
Combine the above ingredients in a small bowl and set aside.
1 1/2 lb. ground beef
3 slices of bread, finely diced with a knife
1/2 green pepper, chopped
1 small onion diced or 1/2 med. onion
3/4 tsp. salt
2 Tbsp. brown sugar or molasses
Dash of celery salt, and pepper and a pinch of mustard
1 egg, lightly beaten with a fork
1/4 c. milk
Combine all of the above ingredients and also mix in 1/2 of the catsup
mixture.
Pack into a loaf pan. Spread the remaining catsup over the
loaf.
Bake at 350 deg. for 50-60 min. until fully cooked.
This tasty loaf may be cooked then cooled, sliced or cut in half
and frozen.
Reheat as needed.
Tried and True, this
recipe is one my Dad's. He's very active and in his 80's. He
makes soup from scratch, makes homemade jams, fills his freezer,
bakes custards, and makes all their meals everyday and serves plenty of
home grown veggies.
