Servings 8, easily increased.
3/4 lb. white fish fillets (halibut or other firm fish)
3/4 lb. scallops
8 medium shrimp
8 mango chunks
8 papaya chunks
1 green pepper in chunks
2 limes, quartered
1/3 cup red wine
3 tbsp. olive oil
1/2 tsp. dried marjoram
1/4 tsp. black pepper
Cut fish into chunks. Thread bamboo skewers alternately with
all ingredients
except lime wedges. End each skewer with lime.
Combine marinade ingredients and brush on kabobs.
Broil or barbecue brushing with marinade often.
