BASE:
3 lb. 10½ oz. or 3 qts. 3 cups Flour
1 1/2 Tbsp Salt
3/4 Tbsp. baking soda
9 cups Rolled Oats
3 lbs margarine
LIGHT SUGAR FILLING:
7 qts. + 1 c. Marion Blackberries IQF or fresh
1 1/2 c. Sugar (or more to personal
preference)
6 Tbsp. Cornstarch
2 1/2 Tbsp. Water
1 tsp. Salt
2 1/2 Tbsp. Lemon Juice
For Topping
1. Combine all ingredients. Mix until
crumb-like consistency.
2. Scale approximately 3½ lb. mixture
into four steam table pans, 12" x 20" x 2".
Pat mixture firmly into bottom of pan.
3. Sprinkle remaining crumbs over filling.
4. Bake at 350 degrees for approximately 30
minutes.
For Filling
1. Combine berries and sugar.
2. Heat until well blended.
3. Slowly add cornstarch/water mixture and
salt.
4. Cook until thickened, approximately 5 minutes.
5. Add lemon juice. Remove from heat.
