3 c. cooked sweet potatoes,
mashed
1/2 tsp. salt
1 stick melted butter
1 c. sugar
2 eggs, beaten
1 tsp. vanilla
Mix all ingredients and put into casserole. Cover with topping.
Topping:
1 c. brown sugar
1/3 c. flour
1/2 stick margarine
1 c. pecans, finely chopped
1/2 c. milk
Mix brown sugar, flour and margarine together add pecans and milk,
spread over potato mixture. Bake at 350 degrees for 30 to
35 minutes.
May be made ahead of time and frozen then baked.
Cover casserole if you desire.
