Hi Dayle, I am sending a recipe from
last night's dinner. Was it ever a gorgeous presentation. I could really see
this at Christmas time with a bow made of roasted red peppers to garnish when
baked. Iris.
2 (10 ounce) packages frozen broccoli spears
1 tablespoon butter, melted
2 egg whites
1/4 teaspoon salt
1/3 cup mayonnaise
Parmesan cheese for topping
Cook broccoli spears, according to package directions. Drain well. Arrange
broccoli with stem ends toward center of an oven-proof patter or in a 9-inch
pie plate. Brush broccoli with the melted butter. Beat egg whites and salt
with a rotary beater until stiff. Gently fold in mayonnaise. Spoon mixture in
center of broccoli (over where the stems meet). Sprinkle with Parmesan cheese.
Bake at 350 for 12 to 15 minutes. Yield: 6 servings
