This recipe is excerpted from my "Cooking with Mickey Mouse" cookbook.
It is made at The Land Grille Room at Disney's EPCOT Center. This is one of my favorite recipes!
Preheat oven to 375 degrees.
Pour mixture into an un-greased angel food cake pan and bake 40 to 50 minutes, or until crust is golden brown.
Allow cake to cool upside-down on a bottle, so that no pressure is on the cake. Cool approximately 2 hours.
Serve with fresh berries and strawberry coulis.

Yields: 1 cake
13/4 cups egg whites
1/8 teaspoon vanilla extract
13/4 cups granulated sugar
1/8 teaspoon lemon zest
11/2 teaspoons cream of tarter (grated from lemon rind)
1/2 teaspoon salt Strawberry coulis (recipe follows)
11/4 cups cake flourIn a large mixing bowl, whip egg whites until stiff peaks form. Combine sugar and cream of tartar
and add to stiffly beaten egg whites. Sift cake flour and salt and add to egg whites in thirds, mixing well after each addition. Finally, add vanilla and lemon zest, folding carefully so as not to break down batter.
11/2 cup granulated sugar
1 cup strawberry jam
11/2 cup waterPuree all ingredients in a blender or food processor and pass through a large sieve. Serve with angel food cake.
