Herb Bread

3 tbsp butter
1/2 c chopped onion
1 cup milk
3 cups bread flour
1 1/2 tsp salt
1 1/2 tbsp sugar
1/2 tsp dried dill
1/2 tsp dried basil
1/2 tsp dried rosemary
1 1/2 tsp active dry yeast

The recipe says to melt butter in a skillet and cook onion til soft then put in bread pan with other ingredients. I am lazy and that seemed like too much work so I used a little less than 1/4 cup of dried onion and just put that and the butter in the bread pan with all the other ingredients. Bake on basic setting, light crust. It was GOOD and smelled so good while cooking.

 

 

Sun Dried Tomato Basil Bread

Ingredients to make a 2lb. loaf

Water---------- 1 1/3 cup
Olive Oil-------1 Tablespoon
Sun-dried tomatoes--1 cup
Sugar--1 Tablespoon
Salt---------1 Teaspoon
Basil--------1 Tablespoon
Bread Flour------4 cups
Red Star® Active Dry Yeast----1 1/2 Teaspoon

Follow the directions on your bread maker. This one calls for placing ingredients in bread pan in order listed, insert pan in machine.

You have to set it to Knead, Rise 1, Punch, Rise 2,Shape, Rise 3, Bake 355°F.

 

Crusty French Rolls

1-1/4 cups warm water
2 tsp. sugar
1 tsp. salt
3-1/2 cups bread flour
1-1/4 tsp. yeast
1 tbsp. cornmeal
1 egg white
1 tbsp. water

In bread machine pan, place the first 5 ingredients as recommended by your machine. Select dough cycle. When cycle is completed, turn dough onto lightly floured surface. Divide into 18 portions; shape each into a ball and place on lightly greased baking pan; sprinkle with cornmeal. Cover and let rise in a warm place until doubled, about 45 minutes. Beat egg white and water; brush over dough. Bake at 375°F for 15 minute; brush with egg white mixture again. Bake 10 minutes or until golden brown.

 

Quick Potato Bread

1 1/3 cups water
3 tablespoons butter
2 1/2 tablespoons sugar
1 teaspoon salt
1/4 cup potato flakes
3 1/2 cups bread flour
2 teaspoons yeast

Add the ingredients to your bread machine in the order they are listed. Do this on the large white setting.

 

Chedder Cheese Bread

3 cups Bread Flour
1/4 cup Dry Milk -- powder
1 tablespoon Butter
1 teaspoon Salt
2 tablespoons Sugar
1 1/4 cups Warm Water
2 cups Cheddar Cheese -- shredded
2 teaspoons bread machine yeast

Add the cheese when you hear the last beep. Bake on your large dark setting.

 

Caraway Rye Bread

1.5 pound loaf

1 1/4 cups water
1 tbsp. margarine or butter, softened
2 1/2 cups bread flour
3/4 cup rye flour
2 tbsp dry milk
2 tbsp sugar
1 1/2 tsp salt
3/4 tsp caraway seed
2 1/2 tsp. bread machine yeast

Place all ing. in bread pan in order listed. Select white bread setting, choose your crust color , choose large or 1.5 for loaf size and start machine.

 

Taco Bread

1 1/2 pound loaf

9 oz Water
1 1/2 tb Applesauce
2 tb Sugar
1 t Salt
3/4 c Cornmeal
1/4 c Whole wheat flour
3 tb Taco seasoning
2 c Bread flour
1 1/2 ts Yeast

Put in bread machine in order. Tastes like a taco wonderful with chili.

*****NOTE***** the applesauce takes the place of oil in the bread

 

Cottage Cheese & Chive Bread

1 cup cottage cheese
1 egg
1.5 tsp. salt
2 Tbsp. butter
3-5 ounces water
3 3/4 cups bread flour
3 Tbsp. dried chives
2.5 Tbsp. sugar
2 1/4 tsp. yeast

All ingredients should be room temperature and added to the machine in THAT order. Set it for the dough cycle, then take it out and baked it in conventional oven instead of the machine.

I baked the bread at 350°F for about 45 minutes or so....

 

 

 

 

Sweet Breads

 

Cinnamon Raisin Bread

1 1/4 cups water
1 tablespoon powdered milk
2 tablespoons butter
2 tablespoons sugar
1 1/4 teaspoons salt
3 1/2 cups Bread Flour
1 teaspoon cinnamon
2 teaspoon yeast
1/4 cup raisins

Measure the first 8 ingredients in the order listed into the Baking Pan. Select: Sweet Bread Setting. Select Regular or Dark crust. Add raisins when Add Ingredients signal beeps. Remove when finished. Cool before slicing.

 

Gingerbread

1 cup milk
1 egg beaten
1 tbsp. shortening
2 tbsps molasses
2 tbsp brown sugar
3/4 tsp salt
3 cups white bread flour
3/4 tsp. ginger
1/2 tsp cinnamon
1/4 tsp ground cloves
2 tsp yeast(bread machine yeast)

MEASURE INGREDIENTS IN THE ORDER LISTED INTO BAKING PAN INSERT BAKING PAN INTO CHAMBER (SECURE) AND CLOSE LID SELECT "RAPID BAKE" SELECT LIGHT CRUST AND PROCEED THE WAY YOUR BREAD MACHINE WORKS! IF YOUR MACHINE ADDS THE DRY INGREDIENTS FIRST, THEN ADD THEM IN THE ORDER THAT YOU WOULD NORMALLY TO BAKE BREAD IN IT!

 

Black Forest Chocolate Cherry Bread

  • 2/3 cup water
  • 1/3 cup unsweetened cocoa powder
  • 1 ½ tsp active dry yeast
  • 1 ¾ cup plus 2 tbs bread flour
  • 1/3 cup sugar
  • 1 tsp salt
  • 2 tbs unsalted butter (or unsweetened applesauce)
  • 1 egg yolk
  • ½ cup dried tart cherries
  • ¼ cup rum or kirsch

1. Bring the water to a boil in a small saucepan. Add cocoa and stir until completely dissolved. Let cool to room temp.

2. Add cocoa and all remaining ingredients except the cherries and the rum in the order suggested by your bread machine manual and process on the sweet bread cycle. (Regular cycle is OK too)

3. Meanwhile, soak the cherries in half of the rum. At the beeper (or at the end of the first kneading), add the cherries and their soaking liquid.

4. When you remove the bread from the machine, brush the remaining rum over the top of the loaf. Serve warm or cooled.

Makes a 1 lb loaf.

 

Banana Bread


Ingredients:

1 1/4 cups Fresh Milk
1 Egg yolk
2 TBS Olive Oil
1 tsp Salt
2 TBS Sugar
3/4 cup Ripe Banana(sliced thin)
4 cups Bread Flour
2 tsp Active Dry yeast

Add ingredients to the bread pan in the order they are listed. Select setting to "Basic". Change crust color or leave it at "P" or medium as desired. Press Start/Stop to begin. When display reads 0:00, press Start/Stop for 3 seconds to cancel. Use oven mitts to handle hot bread pan.

*Delayed Timer Set & Rapid Bread setting can not be used in this recipe

 

 

 

Doughs & Stuff

 

Whole Wheat Pizza Dough

1 C water
2 tsp canola oil
2 C all-purpose bread-machine flour
1 C whole wheat flour
1 T sugar
2 tsp bread-machine yeast (I really don't think there's a diff b/t bread-machine yeast & regular yeast)
3/4 tsp Italian seasoning or oregano
1/4 tsp salt

Add the water, oil, both flours, sugar, yeast, seasoning, and salt to the bread machine in the order required by your machine. Select the dough setting.

Spray a 12" round pizza pan w/nonstick veg spray. Lightly flour your fingertips. Remove the dough and flatten it into a disc and place it on the pizza pan. Gently stretch the dough, working it to fit the pan.

Build up the edges slightly. DO NOT LET RISE. Bake in a 425°F oven for about 8 min until lightly browned. Remove pizza crust and reduce temp to 325°F.

Spread the sauce and your toppings on the hot crust. Bake for 10-15 min or until done at 325°F.

 

Pizza Crust

7 - 8 oz water
3/4 tsp salt
2 tbsp olive oil
2 1/2 cup flour
2 tsp sugar
2 tsp active dry yeast

Measure all ingredients into the bread pan. Select Dough setting. Press Start. When the unit signals and display reads 0:00 press Stop and remove dough. Pat dough into 12 x 15 inch jelly roll pan or greased 12 inch round pizza pan. Let stand for 10 minutes. Preheat oven to 400°F. Spread pizza sauce over dough, add desired toppings and bake 15 - 20 minutes, or until crust is golden brown. I also like to put garlic powder in with the ingredients for a garlicky crust.
