MARGARITA CHEESECAKE
Crust:
1-1/4 cups salted pretzel crumbs
1 TBLS sugar
1/2 cup butter or margarine, melted
Combine salted pretzel crumbs, sugar, and butter. Firmly press onto bottom and
1" up sides of a 9" springform pan. Bake at 375 for 6 to 8 minutes.
Set aside.
Filling:
2 8 oz pkg cream cheese, softened
4 large eggs
10 TBLS sugar
2 individual size envelopes instant Margarita mix
1 tsp grated lime rind (also from a real live lime)
1/3 cup tequila
1/2 tsp vanilla extract
Beat cream cheese at medium speed with and electric mixer until fluffy.
Gradually add sugar and Margarita mix, beating well. Add eggs, one at a time,
beating well after each addition. Stir in tequila, grated lime rind, and
vanilla. Pour into prepared pan. Bake at 375 for 25 to 30 minutes or until
center is almost set. Remove from oven, cool on wire rack 30 minutes.
Topping:
16 oz sour cream
1/4 cup sugar
1/2 tsp grated lime rind
1 TBSP fresh lime juice
Combine sour cream, sugar, grated lime rind, and fresh lime juice, spread over
top of cheesecake. Bake at 425 for 10 minutes. Remove from oven, cool
completely on a wire rack. Cover and chill 8 hours.
SANDALWOODS CHOCOLATE AMARETTO CHEESECAKE
Crust:
1-1/2 cups chocolate crumbs
1 cup chopped almonds
1/3 cup sugar
6 TBSP butter or margarine, melted
Combine chocolate crumbs, almonds, sugar, and butter. Pat mixture onto bottom
and sides of a 9 inch springform pan, buttered.
Filling:
1-1/2 lbs softened cream cheese
1 cup sugar
4 eggs
1/3 cup heavy cream
1/4 cup Amaretto
1 tsp vanilla
Cream together cream cheese and sugar. Beat in eggs one at a time, beating well
after each addition. Add heavy cream, Amaretto, and vanilla. Pour batter into
shell and bake at 375 for 35 - 40 minutes. Transfer to rack and let stand for
10 minutes.
Topping:
2 cups sour cream
1 TBLS sugar
1 tsp vanilla
Combine sour cream, sugar, and vanilla. Spread on cake and bake for 5 minutes
at 425. Cool completely, on rack, and chill overnight.
POPPYSEED BREAD
3 cups all purpose flour
2-1/2 cups sugar
1-1/2 tsp salt
1-1/2 tsp baking powder
3 eggs
1-1/2 cups milk
1-1/8 cups oil
1-1/2 TBLS poppy seeds
1-1/2 tsp vanilla extract
1-1/2 tsp almond extract
1-1/2 tsp butter flavoring
Mix together and beat for 2 minutes on medium speed with electric mixer. Bake
in 3 greased loaf pans for 1 hour at 350.
Glaze:
3/4 cup sugar
1/4 cup orange juice
1/2 tsp vanilla extract
1/2 tsp almond extract
1/2 tsp butter flavoring
Combine and pour over hot bread.
