FETA SPINACH PIE
This appetizer pie is extremely rich--how could it not be with three kinds of cheese? Serves 12 to 16. Per serving: 141 calories, 10 grams fat, 70 milligrams cholesterol, 3.8 grams carbohydrates, 1.8 grams fiber, 9.8 grams protein.
3/4 pound Muenster cheese, thinly sliced
3 10-ounce packages frozen chopped spinach, thawed and drained
1 cup feta cheese, crumbled
3 eggs, at room temperature, beaten
1 small onion, chopped
1/3 cup Parmesan cheese
1/2 teaspoon dill weed
1/4 teaspoon black pepper
Paprika
Preheat oven to 350 degrees. Cover bottom and sides of a 10-inch pie pan with overlapping slices of Muenster.
Combine spinach with feta cheese, eggs, onions, Parmesan, dill, and pepper. Scoop into pie pan. Sprinkle with paprika. Bake 1 hour. Let stand 5 minutes before serving.
