SHRIMP LINGUINE
Serves 8.
1 pound medium shrimp, shelled and deveined
1/2 cup dry white wine
1 tablespoon lemon juice
1 tablespoon lime juice
1/4 pound fresh snow peas
6 green onions, sliced
1 tablespoon chopped fresh parsley
3/4 teaspoon dried basil
1/2 teaspoon lemon pepper
2 cloves garlic, minced
1 bay leaf
8 ounces uncooked linguine
In a large skillet, combine shrimp, wine, lemon juice, and lime juice. Bring to a boil. Reduce heat to low; simmer, covered, 3 minutes.
Add remaining ingredients, except linguine. Cook, stirring constantly, until snow peas are tender and shrimp are pink, about 5 minutes.
Cook linguine according to package directions; drain. Remove bay leaf from shrimp mixture. Combine with hot cooked linguine; toss.
Per serving: 221 calories, 2 grams fat, 86 milligrams cholesterol, 32 grams carbohydrates, 4 grams fiber, 18 grams protein, 128 milligrams sodium.
