Easy Low-Fat Lasagna


(This recipe is made vegetarian, don't worry, it tastes really good, but you can add lean smoked ham if desired)

You need:
  • lasagna noodles
  • mushrooms
  • low-fat pasta sauce
  • sliced onions
  • low-fat cottage cheese
  • sliced green bell peppers
  • 1 pkg leaf spinach
  • low-fat mozzarella/cheddar

    Preheat the oven to 350 degrees. Layer the noodles, sauce, cottage cheese, spinach, mozzarella cheese, mushrooms, onions, and green pepper 1/2 at a time in a greased glass 8x14" baking dish. Top with additional cheese. Bake for 1 hour. Serve with a tossed salad and bread sticks.

    Yield:8-12 servings
