Irish Coffee
Ingredients:
One stemmed whiskey glass
Very hot strong expresso
Heaps of chantilly or whipped cream
2 teaspoons of sugar
A large measure of Irish Whiskey!
A little powdered cinnamon
Heat glass. Heat whiskey and poor into the glass. Fill glass with
hot black
expresso, upto half an inch from the rim. Add sugar and stir.
Float the chantilly
cream on top, rising to at least an inch above the
rim and sprinkle with a pinch
of cinnamon powder. (If you are a boring purist, with no penchant
for the
dramatic, pour whipped cream over a spoon and try to make it float
on top.
Immediately drink all the contents if the cream mixes with the coffee
and try
again. When you manage to scare away your hangover, buy a pressurized
chantilly bottle and go back to the top of the page to start again!
If you want to be a real swish so-and-so, glaze the rim of the glass
with sugar,
but figure it out for yourself, 'cause we ain't about to give
away all our secrets!
The secret lies in the combination of the strong expresso with an
Irish Whiskey kick, sipped through the cold soothing cream on top.
PS: Do not drink through a straw. We can live with
singed lips and tongues,
but a burnt epiglottis is another story!

who, through strategy and stealth,
drove all the snakes from Ireland,
here's toasting to his health.
But not too many toastings,
lest you lose yourself and then,
forget the good St. Patrick,
and see all those snakes again.
Irish Whiskey and Ginger Cream
2 T Irish whiskey
2 T Ginger marmalade
1 x Rind of 1 lemon, grated
2 T Superfine sugar
10 fl. oz. Heavy cream, chilled
2 ea Egg whites
(If no store near you carries ginger marmalade, use an equivalent
amount of lemon
marmalade mixed with 1/2 t ground ginger, or 1 T fresh grated ginger.)
Put the whiskey, marmalade, lemon rind and sugar in a bowl. Stir
well, then leave the
mixture to stand for at least 15 minutes. Stir the cream slowly
into the whisky mixture
until evenly blended, then beat with an electric or rotary beater
until thick. Beat the egg
whites until stiff, then fold into the cream mixture until well
blended. Spoon into 4
individual wine glasses or sundae dishes, then chill in the refrigerator
for at least
30 minutes. Serve chilled, with brandy snaps or ginger snaps. Servings:
