Broccoli and Rice Casserole

1 cup celery chopped
1 cup onions chopped
4 T oil
2 pkg frozen chopped broccoli thawed and drained
2 small jars of cheese whiz
2 cans cream of chicken soup
4 cups cooked rice
4 T milk

Saute celery and onions in oil till tender, add broccoli, cheese whiz and mix well. Add remaining ing. mixing well. Bake at 350 degrees for 45 mins. This is a double recipe and fits a 9x13 inch baking dish. For 2-4 people cut all ing. in 1/2 and bake in round casserole dish. Enjoy!!

Saucy Chicken

1/2 cup Smucker's Orange Marmalade

1/2 cup ketchup

1/2 cup soy sauce

1/2 cup water

1 Broiler fryer, cut into serving pieces

In a large glass or china bowl, combine soy sauce, ketchup, marmalade, and water. Add chicken pieces. Refergerate for 3 to 4 hours, or overnight, turning chicken pieces occasionally. Remove chicken and place in a single layer, skin side up, in a baking pan. Brush with sauce. Bake, uncovered, in a 375 degree oven 45 to 50 minutes, or until chicken is tender. Brush with sauce several times during cooking. Serve remaining sauce with chicken. Yield 3-4 Servings.
Good Idea: This sauce is excellent brushed over hamburger patties, or used as a sauce to heat up meatballs or thin slices of leftover roast pork.

Raw Apple Cake

2 cups raw apples chopped
1 cup flour
1 cup sugar
1 cup chopped nuts
1/4 cup oil
3/4 cup raisins
1 egg
1/2 tsp. salt
1 tsp. cinnimon
1 tsp. baking soda

Mix all ing. together well and bake in a greased 8x8x2 inch pan at 350 degrees for 40 to 45 minutes.

Zuccini Torta

4 cups shredded zuccini
2 small onions chopped
2 sticks celery chopped fine
chopped parsley to taste
2 minced garlic cloves
5 eggs beaten
1/4 cup oil
1/2 cup parmesan cheese
1 1/2 cups bisquick
salt and pepper

Add first 5 ing. together in large bowl. Beat eggs, add oil, cheese and mix well. Add to mixture in large bowl. Stir in bisquick mixing well. Grease 9x11 inch glass baking pan. Bake at 325 degrees for 45 minutes or until done.
