Kansas City Barbecue Sauce

  • 1 teaspoon salt
  • 3 cups Basic Brown Soup Stock or canned beef broth
  • 1/4 cup white wine vinegar
  • 1/2 cup Worcestershire Sauce
  • 1 cup tomato paste
  • 1 tablespoon chili powder
  • 3 tablespoons paprika
  • 1 tablespoon whole sage leaves, rubbed *
  • 1 1/2 teaspoons cayenne pepper
  • 1 teaspoon turmeric
  • 3 cloves garlic, peeled and crushed

    * Rubbed: When whole-leaf herbs, such as sage or bay leaves, are crushed in the
    hands so that their oils are released, the herbs are then reffered to as
    having been rubbed.
