| The Rice Heat 1T butter in a pan and heat 2/3c jasmine rice and a lime. Stir for 1 minute. Add 1 cup water, 2tsp fresh cilantro, and 1/2 tsp. salt. When boiling, turn heat down and simmer for about 45 minutes. | The Guacamole Mash 1 avocado with a fork and add 2 tsp lime juice. Add 2T chopped, fresh, cilantro. Add 1/4c finely chopped red onions. Add 2 cloves minced garlic and 1/4 tsp. salt. |
| The Vegetables Saute peppers and onion in vegetable oil. Add the spices to taste. (Similar to the chicken marinade) |
The Chicken Spread mixture over chicken and marinate at least an hour, Grill chicken. |
