Chipotle's Chicken Fajita Burritos</HEAD>

Ok. This is a total copykat recipe which I had nothing to do with but, WOW! It's almost identical to the Chipotle flavor. I don't really improvise a lot on this one. Just try to grill the chicken. It's a lot better than frying. There are 4 parts, the rice, the vegetables, the guacamole, and the chicken (or you can substitute beef. Same recipe).

Chipotle's Chicken Fajita Burritos




The Rice
  • 1T butter
  • 2/3c jasmine or basmati rice
  • 1 lime
  • 1 cup water
  • 1/2tsp salt
    Heat 1T butter in a pan and heat 2/3c jasmine rice and a lime. Stir for 1 minute.
    Add 1 cup water, 2tsp fresh cilantro, and 1/2 tsp. salt.
    When boiling, turn heat down and simmer for about 45 minutes.
  • The Guacamole
  • 1 avocado
  • lime juice
  • 2T chopped, fresh cilantro
  • 1/4c finely chopped red onions.
  • 2 cloves minced garlic
  • 1/4tsp salt.
    Mash 1 avocado with a fork and add 2 tsp lime juice.
    Add 2T chopped, fresh, cilantro. Add 1/4c finely chopped red onions.
    Add 2 cloves minced garlic and 1/4 tsp. salt.
  • The Vegetables
  • 1 Green bell pepper(sliced)
  • 1 Red bell pepper (sliced)
  • 1 onion
  • Oregano, pepper, cumin, garlic, onion, and vegetable oil.
    Saute peppers and onion in vegetable oil.
    Add the spices to taste. (Similar to the chicken marinade)
  • The Chicken
  • 1 tsp black pepper
  • 2tsp cumin powder
  • 2T fresh oregano, chopped
  • 6 cloves garlic
  • 1/2 red onion, quartered
  • 1/4c vegetable oil
  • 4 chicken breasts
    Spread mixture over chicken and marinate at least an hour,
    Grill chicken.


  • Assemble the burritos
    - Warm a large tortilla.
    - Layer guacamole, sour cream, rice, vegies, and chicken onto tortilla.
    - Wrap tortilla up tightly and stuff down yer troat.
    - Lay down and enjoy the exquisite pain of eating too much of this incredible recipe.
