Caipirinha
(typical brazilian drink)
Caipirinha

1 lime or lemon
2 ounces of cachaça

Sugar to taste
Ice cubes
Wash the lime and roll it on the board to loosen the juices. Cut the lime (lemon) into pieces and place them in a glass. Sprinkle with the sugar and crush the pieces (pulp side up) with a pestle. Add the cachaça and stir to mix. Add the ice and stir again. It is delicious and potent... and can be dangerous too... You can also make a pitcher of caipirinha. Figure out how many people and multiply amounts.
Note: Instead of cachaça, use a good vodka. The drink will then be called caipiroska. Using white rum then you will have a caipiríssima.

1/2 bottle of cachaça
1 cup water
some orange
(or lemon) peels
some crushed (or ground) ginger
6 T sugar (or honey)
1 cinnamon stick
5 clove
some vanille extract
Put all ingredients into a pot and boil for 15 min. uncovered. Ornate with orange peel and serve hot.

Vaca Malhada
(brazilian iced chocolate Coca-Cola)

2 oz Chocolate, unsweetened
1/4 c sugar
1 c Coffee, double-strength
hot 2 1/2 c Milk
1 1/2 c Coca Cola, chilled
whipped cream, chocolate or
vanilla ice cream
some vanille sugar
In the top of a double-boiler over hot water, melt the chocolate squares. Stir in the sugar. Gradually stir in hot coffee, mixing thoroughly. Add the milk and continue cooking until all particles of the chocolate are dissolved and the mixture is smooth, about 10 minutes. Pour into a jar. Cover and chill. When ready to serve, stir in the chilled Coca-Cola. Serve over ice cubes in tall glasses. For a beverage, top with whipped cream. For a dessert, add a scoop of vanilla ice cream. Makes 5 cups.
