Creamy Rice Pudding


1 cup of water 1/2 cup of rice
1 quart of milk
2 tablespoons of butter
3 eggs
1/2 cup of sugar
1 teaspoon of pure vanilla extract


Beat one cup of water, Add 1/2 cup of rice and cook. covered for 8 minutes. Add one quart of milk and butter. Bring to a boil. Cover and cook on low heat for one hour. Beat eggs, sugar, and vanilla. Pour into the rice mixture and stir for one minute, until creamy.

Pour into a casserole dish and sprinkle with cinnamon.

Cool then refrigerate.
