Spinach Tortellini Soup

1 Chopped Onion Olive Oil
2 48 oz. cans of Chicken Broth
1 10 oz. pkg. frozen chopped Spinach
1/2 cup Acini de pepe (or small pasta of your choice)
2 Eggs, beaten
1/2 bag of frozen Cheese Tortellini

Saute the chopped onion in a small amount of olive oil. Add the two cans of chicken broth, frozen chopped spinach, and the acini de pepe and bring to a boil.

Add the frozen tortellini and cook for 20 minutes. Stir in the beaten eggs and cook for a few minutes while stirring constantly and serve. Easy and delicious.
