EGGPLANT PARMESAN

1 fresh large eggplant
3 large eggs
italian bread crumbs
oil for frying
prepared tomato sauce
mozzarella cheese(shredded or sliced)
2 TBLS.of milk

slice eggplant into 1/4 inch slices
in a large bowl beat eggs
in another bowl place bread crumbs
dredge each sliced eggplant into egg and milk mixture
then into the italian bread crumbs coating each side
refrigerate one hour uncovered
heat oil in frying pan
fry eggplant on both sides
drain well
in a square baking dish,coat bottom of pan with tomato sauce coating well
place eggplant slices(layering on top cheese and tomato sauce)
repeat until completed
bake at 350 degrees for 40 minutes
