DIVA'S ROASTED POTATOES AND PEAS

3 pound of fresh potatoes (sliced or cubed 2 inches wide)

1 can of peas
oil
salt and pepper to taste
1 14 oz. can of chicken broth

Preheat oven to 350 degrees
In a baking dish, place oil at the bottom of pan, add potatoes.
season well, adding half the can of chicken broth.
Bake covered for 30 minutes, (stir now and then)...uncover, adding the can of peas and the rest of the chicken broth
continue baking for 15 minutes until potatoes are slightly brown on top.

Serve as a side dish with any entree.
