1 1/2 pounds of Italian sausage (casting removed)
In a frying pan, heat oil, fry sausage that has been removed from casting..until done. Place in baking deep dish, covered.
DIVA'S ITALIAN STUFFING
2 tablespoons of butter
1 large onion chopped fine
1 tablespoon of parsley
1 egg beatened
2 cups of bread cubes
oil for frying
1 14 ounce can of chick broth
1 stalk of celery choped fine
salt and peerper to taste
Remove from pan and drain well.
Place aside.
In a large pan, sautee onion, and celery until the onion is translucent in butter.
In a large bowl, mix bread cubes, egg,,half the chicken broth then all other ingredients.
Add cooked sausage, and the celery and onion mixture., after this, look at the consistency of the stuffing and adding a little at a time more broth, till the stuffing is of a solid consistency as you desire.
Mix well.
Preheat oven to 325 degrees and bake for 45 miinutes.
Remove cover for the last 20 minutes, to slightly brown on the top.
You may use this stuffing as side dish or for stuffing poultry.
