Tomato Vodka Sauce

2 teaspoons olive oil,
1 medium oinion, chopped,
1 tablespoon water [optional],
6 oz lean Canadian Bacon,
1/4 cup [2 oz] vodka,
1 [15 oz] can diced tomatoes,
1 [8-oz] can tomato sauce,
12 Kalamata olives, pitted + quarted,
1/2 teaspoon sugar,
1/4 teaspoon each: salt + pepper,
3 tablespoons Parmesan cheese,
1/2 cup fat-free half and half,
1/4 cup loosely packed shredded fresh basil leaves.

1. In a large skillett, heat oil until medium-hot.
Add oinion + saute over medium heat, adding water if needed to avoid sticking, until soft, about 10 minutes.
2. Add Bacon + vodka. Cook for 3 minutes.
3. Keep heat on medium, add tomatoes, tomato sauce, olives, sugar, salt+ pepper.
Cook, stirring for 12 minutes.
4Stir in Parmesan cheese, half + half,+ basil.

Serve tossed over hot cooked penne pasta.
