Salmon in a Sorrel Cream Sauce

Method:
Chop the mushrooms in half. Chop the shallots finely. Put a little butter
in a frying pan and fry the shallots and mushrooms until the shallots are
soft. Then add the wine and reduce until all the wine has evaporated.
Meanwhile cut the salmon into four equal size pieces. Place a knob
of butter on each piece and wrap each piece in foil.
Bake the fish in a hot oven (200C/400F/6) for 10 minutes.
To finish the sauce add the cream and bring to a simmer. Finally add
the sorrel and serve. |
