Challah

Preheat oven to 350.
In a small bowl combine:
1/2 c warm water
2 T yeast
1 T sugar
Cover and let stand for 10 min.

In another bowl, mix:
1 c oil
1/2 c honey
3 t salt
3 eggs - beat and save 3T for top
1 c flour

Stir. Add yeast, 1 c flour, 1-1/4 c warm water. Stir. 5 c flour, a little at a time. Knead VERY well.
Grease bowl, cover with damp cloth and let rise 1 hr.
Knead 3 more times.
Divide in half. Braid each loaf. Let rise 1 hour, covered.

Bake 5 min. Add 3-4 drops water to remaining egg mixture and brush over loaf.
Bake to golden brown, 15-20 min.
