Texas Dirt
Combine: 8 oz. cream cheese, 1 cup powdered sugar. 1/2 cup butter,
Then add: 3 cups milk 2 large boxes of instant pudding. ( vanilla works best )
Then add : 2 small tubs of cool whip or 1 large container.
Put all of this mixture in a small/ med. flower pot (plastic). Top with crushed Oreos I pkg Add flowers of choice.
1/2 cup butter or margarine softened, 1/2 cup sugar, 2 eggs, 2 cups all-purpose flour, 2 teaspoons baking powder, 8 oz (can) crushed pineapple undrained, 1 teaspoon vanilla extract
Cream butter; gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition. Combine flour and baking powder; add to creamed mixture alternately with pineapple, mixing well. Stir in vanilla extract. Spoon batter into a greased and floured 9- x 5- x 3-inch loaf pan. Bake at 350 degrees F. for 55 minutes to 1 hour or until a wooden pick inserted in center comes out clean. Cool loaf in pan 10 minutes; remove from pan and cool completely on a wire rack.
1 hen or 2 fryers, 1 can Rotel tomatoes 1 can cream of mushroom soup, 1 can cream of chicken soup, 1 can cream of mushroom soup,1/2 can chicken broth, 1 large package Doritos (any CORN tortilla chips), 2 cups sharp cheese, grated, 1 onion, chopped
Cover chicken with water and 1 Tbsp salt. Simmer until tender. Remove from bones and shred into med-large bites size pieces. Mix soups, Rotel tomatoes, broth and onions. Layer half of Doritos, 1/2 chicken, 1/2 soup mixture and 1/2 cheese in a large casserole dish. Repeat. Bake for 1 hour at 325 degrees.
Even tastes great reheated!
3 lb beef steak (1/2 inch thick), 1/2 cup flour Salt and pepper to taste, 1 can (10 1/2 oz) condensed beef broth, 1/4 cup dry white wine (optional), 1 1/2 cup sour cream, 1/2 tsp dry mustard, 2 medium onions (thinly sliced and separated into rings), 2 cans sliced mushrooms (drained), 1/4 cup flour, hot buttered noodles or fluffy rice, 3 Tbsp minced parsley
Trim all excess fat from steak and cut into 3 inch strips, 1/2 inch wide. Combine 1/2 cup flour, salt, pepper, and dry mustard; toss with steak strips to coat thoroughly. Place coated steak strips in crock pot; stir in onion rings and mushrooms. Add beef broth and wine; stir well. Cover and cook on low setting for 8 to 10 hours. Before serving, combine sour cream with 1/4 cup flour; stir into crock pot. Serve stroganoff over hot buttered noodles or fluffy rice; garnish with minced parsley.
Jalapeno Relish
Grind jalapenos in food processor. Place l clove of garlic and 1/4 bay leaf in the bottom of pint jars. Pack with ground peppers. Cover with boiling liquid (one part water/one part vinegar) and put 1/2 teaspoon olive oil on top. Seal jars. Whole jalapenos can be pickled this same way.
Taco Dip
1 envelope taco seasoning 1 16 oz. container sour cream 1 8 oz. container cream cheese, softened
Mix sour cream and seasoning together. Stir in cream cheese. Serve with your favorite tortilla chips.
Super Salsa
2 lg. cans Stewed Tomatoes, 1 lg. can diced green chilies, 1 yellow jalapeno, 1 green jalapeno, 1 handful of cilantro, 2-3 bunches green onions, chopped, Garlic to taste (I have been using minced fresh garlic that you get in jars at the grocery story I think it blends better than garlic salt. You can use garlic salt if you don't have the other.)
In food processor, pour 1 can of stewed tomatoes and blend on low speed for a few seconds. Empty into bowl. Put 2nd can of stewed tomatoes into processor, add jalapenos and cilantro and blend well. Empty into bowl. Add diced green chilies, chopped green onions and garlic. Mix well and refrigerate.
Mexican Citrus Chicken
6 servings
3 to 3 1/2-lb. cut-up broiler-fryer chicken Prepare Mexican Citrus Marinade (below). Add chicken, turning to coat with marinade. Cover and refrigerate at least 3 hrs. but no longer then 24 hrs.
Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat. Remove chicken from marinade. Cover and grill chicken, skin sides up, 4-5 inches from med. heat 15 to 20 min.: turn. Cover and grill 20 - 40 min. longer, turning and brushing 2 or 3 times with the marinade, until juice of chicken is no longer pink when center of thickest pcs. are cut. Discard as remaining marinade.
Mexican Citrus Marinade
1/4 cup orange juice, 1/4 cup lime juice, 1/4 cup olive or vegetable oil, 2 tbsp. chopped fresh cilantro or parsley, 2 tsp. chili powder, 1 tsp. ground cumin, 1/2 tsp. salt. 1/4 tsp. red pepper sauce, 1/2 small onion, chopped
Mix all ingredients in shallow nonmetal dish or sealable plastic bag. About 1 cup
Mexican Cornbread
1 cup cream style corn, 1 1/2 cups self rising meal, 1/2 cup oil, 1/2 cup diced bell pepper, 1 cup buttermilk, 1 cup grated chedar cheese, 1 egg, 1/2 teaspoon red pepper flakes
Deiviled Pork Chops
Mix all ingredients and pour into grease, mealed, hot iron skillet. Bake for 30 to 35 minutes @ 375 degrees
6 pork chops, one inch thick, 1 tablespoon Worcestershire sauce, 1 tablespoon lemon juice, 1 teaspoon prepared mustard, 3 tablespoons sweet catsup, 1/2 teaspoon paprika, 1 tablespoon shortening, 1 cup water,salt,black pepper and red pepper
Season pork chops with salt, black pepper and red pepper. Heat shortening in skillet. Brown chops on both sides. Add water. Add ingredients over top of chops. Cover and cook over low heat until done.
Nilla Banana Pudding
1/2 cup sugar, 4 eggs, Nilla Wafers, 3 Tbsp. flour, 2 cups milk, 5-6 med. ripe bananas dash salt, 1/2 tsp. vanilla extract
Reserve 2 Tbsp. sugar. In top of double boiler combine remaining sugar, flour and salt. Beat in 1 whole egg and 3 egg yolks; reserve 3 egg whites. Stir in milk. Cook, uncovered, over boiling water, stirring constantly, 10 minutes, or until thickened. Remove from heat and add vanilla.
Spoon about 1/2 cup custard into bottom of 1 1/2 qt. casserole dish, cover with a layer of Nilla wafers. Top with a layer of sliced bananas; pour about 2/3 cup custard over bananas. Continue layering , ending with custard.
In a small bowl, beat reserved egg whites until stiff but not dry; gradually adding 2 Tbsp. reserved sugar; beat till mixture forms stiff peaks. Spoon on top of custard; spreading to cover entire surface.
Bake @ 425F for 5 minutes, or until surface is lightly browned. Just before serving garnish with banana slices, if desired. Serve warm or chilled. Makes 8 servings
I make 1 1/2 times the pudding amount, adding twice the amount of vanilla. Also this last time I used Keebler Rainbow wafers instead. It was very festive. This has always been my dh's favorite dessert.
Hot Pineaple
(20 oz.) can drained chunk or crushed pineapple 1 cup shredded cheddar cheese, 3 Tablespoons Flour, 1/2 cup sugar, 1/4 cup melted butter, 1/2 cup Ritz buttered crackers, Save 3 tablesoons pineapple juice.
Combine sugar, flour & juice. Add cheese and pineapple. Stir well and put in baking dish. Combine crackers and butter and put on top. Bake at 350 degrees for 20 to 30 minutes.
German Chocolate Pie
1 (4 oz) pkg. Baker's German Chocolate, 1/3 C Milk, 2 Tbsp. sugar (opt), 1 (3 oz) pkg. cream cheese, 8 oz. Cool Whip, 8" or 9" crumb crust
Heat chocolate and 2 Tbsp of the milk in saucepan over low heat, stirring until chocolate is melted. Beat sugar into softened cream cheese. Add remaining milk and chocolate mixture and beat until smooth. Fold in whipped topping. Spoon into crumb crust. Freeze until firm, about 4 hours. Let sit on countertop about 20 minutes before cutting and serving. Top with a dollop of whipped topping or whipped cream and a dusting of cocoa...
Southern Sweet Potato Salad
2 lbs peeled, cubed sweet potatoes, 2 Tbsp. lemon juice, 1 cup mayonnaise, 2 Tbsp. orange juice, 1 Tbsp. honey, 1 tsp. grated orange peel, 1/2 tsp. ground ginger, 1/4 tsp. salt, 1/8 tsp. nutmeg, 1 cup sliced celery, 1/3 cup chopped dates, 1/2 cups chopped pecans, lettuce leaves, 1 can 11-oz mandarin oranges, drained
Cook potatoes till tender, about 5-8 minutes, drain, toss with lemon juice. In large bowl combine mayonnaise, oj, honey, peel, gin, salt, and nutmeg. Add warm potatoes, celery and dates. Toss to coat well. Cover and chill, stir in pecans before serving. Spoon salad onto lettuce lined plate, arrange oranges around salad.
