BAKED ZUCCHINI
you will need the following...
2 Tbsp. butter
6 zucchini, peeled and sliced
1/3 cup chopped red bell pepper
1 tsp. Italian seasoning
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
4 eggs
1 cup of half and half
1 cup of grated provolone cheese
2 Tbsp. flour
1 Tbsp. grated Romano cheese
- Heat butter in a large pan over medium heat. Add sliced
zucchini, chopped red bell pepper, Italian seasoning, pepper salt
and garlic powder.
- Sauté about 5 minutes, or until the vegetables
are tender-crisp; set aside.
In a bowl, beat eggs until foamy. Stir in half and half, grated
provolone cheese, and flour. Add the vegetable mixture and pour
into a greased baking dish. Sprinkle grated Romano cheese on top.
Bake in a 350 degree oven about 40 minutes, or until the center is
set. Let stand for 5 minutes before serving.
Baked Cream Cheese Spread
- you will need the following...
- one 4 ounce can of crecent dinner rollls.
- 8 ounce package of cream cheese.
- 1 egg,beaten.
- 1/2 teaspoon dillweed.
- On a lightly floured surface unroll crecent rolls and patch together to make a 12x4-inch rectangle.
- take half the dill weed and sprinkle it on top of the cream cheese
- press the dill lightly into the cream cheese
- place cream cheese (dill side down) in the middle of your dough.
- sprinkle remaining dill weed on top of cream cheese pressing lightly.
- place on a lightly grease,oven safe,cookie sheet.
- brush with egg yolk.
- bake 15-18 minutes or until lightly brown.
- serve with apple wedges or your favorite cracker.
CheeseBalls
You will need the following...
- 8 oz. cream cheese
- 10 oz. shredded cheddar cheese
- 1/4 tsp. salt
- 1 Tbsp. lemon juice
- 1/4 cup finely-chopped onion
- 1 jalapeno pepper, minced
- 1/4 tsp. salt
- 1 Tbsp. Worcestershire Sauce
- optional Tobasco Sauce to your taste
- Your favorite chopped nuts
Mix all ingredients except nuts and form into a ball. Roll the ball in the nuts.
- you will need the following...
- 1/2 cup italian dressing
- 1/2 cup choped tomato
- one 4ounce can of undrained chopped green chiles
- 1/4 cup chopped green onions
- 1 and 1/2 teaspoons of honey.
- 1/4 teaspoon of hot pepper sauce.
- 2 teaspoons finely chopped cilantro.
- 1 pound cleaned and cooked shrimp.
- In a bowl combine tomatos,chiles,green onions,honey,italitan dressing,and hot pepper sauce.
- stir in the shrimp
- cover and marinate
- stir occasionally while marinating.
- chill at least two hours before serving.
- when ready to serve, stir in cilantro.
