Khichdi (Vaga Muger Khichuri)

Ingredients
1 cup rice (washed and soaked 30 minutes)
1 cup roasted Moong dal (washed and soaked 30 minutes)
1 tbsp. channa dal (washed and soaked 30 minutes)
1 bay leaf
3 green cardamoms
1" stick cinnamon
3 cloves
1/2 tsp. cumin seeds
10-12 baby potatoes washed clean
1/2 cup peas shelled
1 carrot diced
1 tsp. ginger grated
3-4 green chillies finely chopped
1/2 tsp. turmeric powder
1/2 tsp. garam masala powder
salt to taste
5 cups water
4 tbsp. ghee
Method
At first add about 5-6 cups of water in a vessel. Once
it is hot, add channa dal, roasted moong dal and
vegetables. After the dal is boiled for some time, add
the rice to it. Once rice and dal both are adequately
soft, remove the vessel from fire and keep aside.
In a kadai add oil / ghee and heat it. Add cumin
seeds, gram-masala (i.e. cardamom, cinnamon, cloves and
bay leaves. After this add some amount of ginger paste.
Add this mixture to the boiled rice and dal and boil the
whole thing for some time. Then add cumin seed powder,
rest ginger paste and stir. Finally add garam-masala
powder and ghee for aroma and keep aside. Serve hot.
