Mishti Doi (Sweet Yogurt)

Ingredients:
- Milk 1 ltrs
- sugar 100 gms
- Yogurt (Dahi) 25 gms
- Small container of
1.5 kg. capacity Or Casserol
Method:
- Put the milk to boil
on Medium heat.
- Once it is boiled
simmer the gas and beat occasionally.
- See that the milk is
reduced to almost 50 % and becomes thick and
light brown in color.
- Add sugar and mix it
properly.
- Take it off the flame
and cool it till the mixture becomes Luke warm.
- Transfer the mixture
into the Pot / Casserol.
- Mix the Yogurt into
the mixture.
- Cover and allow to
set for 8 to 12 hours at a warm place, do not
open or move the pot during this period.
- Uncover and Store in
a refrigerator, Serve Chilled.
