1) Combine
mayonnaise
and mustard in a small bowl; mix well. Spread 1 tsp. of
this mixture on 1 side of each toast slice.
2) To assemble each sandwich, layer 1 slice of toast, mayonnaise mixture-side up, 1 lettuce leaf, 1 slice of cheese, 2 ounces of ham (or chicken), 2 slices of tomato, 1 slice of toast, mayonnaise mixture-side down. Spread 1 tsp. of the mayonnaise mixture on toast. Continue assembling each sandwich with 1 slice of cheese, 2 ounces of turkey, 2 slices of bacon (if using), 1 lettuce leaf and 1 slice of toast, mayonnaise mixture-side down. Cut into triangles. Secure with toothpicks and serve.
