Cassava(Yucca)Cake(Bibingka)
7 cups grated Cassava(Yucca)
3 whole eggs
2 1/2 cups sugar
2 cans of coconut milk
1/4 cup melted margarine
Mix all the ingridients together. blend well. Grease 2 or 3 9" pie
pans and bake at 350 F for 30 t0 35 minutes or until done.
Topping:
1 can condense milk
2 tbsps. sugar
1 can coconut milk
2 egg yolks, slightly beaten
Put the first three ingridients in a saucepan and boil, stirring
constantly. When thick, add the slightly beaten eggyolks. Cook for
2 minutes. Spread on top the cooked cassava and broil at 400 F for
10 minutes or until golden brown.
