Recipe of Youkan


Ingredients:

rectangular container - - - - - - - - - - 1

gelatin - - - - - - - - - - - - - - - - - - - 2g

water - - - - - - - - - - - - - - - - - - - 200cc

sugar - - - - - - - - - - - - - - - - - - - - 20g

azuki koshi-an(sweet bean jam) - - - - 250g

salt - - - - - - - - - - - - - - - - - - - - a little

To make Youkan:

  1. Put 2g of gelatin and 200cc of water in the pan and mix them. Boil them once and add 20g of sugar.
  2. Boil the mixture again and add azuki koshi-an. Heat them for additional 2 minutes.
  3. Add a pinch of salt before putting out the flame.
  4. Put them into a big bowl with cold water, and stir gently, until they are cooled down.
  5. Pour the ingredient into the container, and cool it in the refrigerator for over 1 hour.
  6. Take it out, after it has been congealed, and cut it into slices.
