Recipe of Youkan
Ingredients:
rectangular container - - - - - - - - - - 1
gelatin - - - - - - - - - - - - - - - - - - - 2g
water - - - - - - - - - - - - - - - - - - - 200cc
sugar - - - - - - - - - - - - - - - - - - - - 20g
azuki koshi-an(sweet bean jam) - - - - 250g
salt - - - - - - - - - - - - - - - - - - - - a little
To make Youkan:
- Put 2g of gelatin and 200cc of water in the pan and mix them. Boil them once and add 20g of sugar.
- Boil the mixture again and add azuki koshi-an. Heat them for additional 2 minutes.
- Add a pinch of salt before putting out the flame.
- Put them into a big bowl with cold water, and stir gently, until they are cooled down.
- Pour the ingredient into the container, and cool it in the refrigerator for over 1 hour.
- Take it out, after it has been congealed, and cut it into slices.
